Tasting Notes

The wine is fermented with wild yeast using traditional techniques and matured in fine French oak barriques for up to 12 months.

This is an intense wine with sour cherry, raspberry, dark plum and underlying smoky oak. A complex nose leaps from the glass and carries liquor cherry, violets, thyme, and forest floor characters. The natural acid extends its presence on the palate, and it finishes with distinct mouth cleansing tannins.
